Kovachii is Northern Peru at its best: a sweet, clean, and remarkably consistent cup that holds up season after season. Sourced from smallholder farmers across Cajamarca and certified organic, this is a coffee built on trust in the land, in the farmers, and in the process.
Processing here is hands-on by nature. Farmers harvest, de-pulp, and dry their own coffee on patios, raised beds, or tarps before bringing finished parchment to collection points in their communities or to the main warehouse in Jaen. Each lot is evaluated, cupped, and priced before the best selections are combined, milled, and prepared for export. The result is a blend that punches above its weight: refined without being fussy, and dependable in a way that's genuinely rare.

Brewing Reccomendations

Here's a good place to start:
- Use a 1:16 ratio. Use the amount of coffee (grams) x 16 of water.
- Get your Water as HOT as you can.
- Aim for a 3-4 minute brew time. To make your brew take longer, grind your coffee finer.
